1 ready-made pie crust
6 large eggs
1 carrot, grated
1 Sm. onion, chopped
1/4 green pepper, chopped
1 cup broccoli, frozen or fresh
1 cup cheddar cheese , grated
1 Sm. tomato, sliced
1/4 cup whole milk
salt/pepper
herbs DE Provence
2 T. butter
Preheat oven to 350 degrees.
Melt butter in small skillet. Add carrot, onion and green pepper. Saute until onions are opaque. Boil broccoli until tender.
Let sauted vegetables and broccoli cool.
Whisk eggs in a bowl. Add sauted vegetables, broccoli, cheese and milk. Season with salt, pepper and Herbs De Provence.
Pour into pie crust.
Top with tomato slices.
Bake in 350 degree oven for approximately 12-15 minutes. You will know it's finished when a toothpick inserted, comes out clean.
